Saucepan
Immersion Blender
1 pound strawberries sliced 1/4 cup water 1 ½ teaspoons lemon juice 1/4 cup sugar
Make Strawberry Sauce In a large saucepan over high heat, add strawberries, water, sugar, and lemon juice. Stir to mix and bring it to a boil.
Reduce the heat and simmer for 10 minutes or until the strawberries become soft.
Remove from heat and blend the strawberries gently (I used an immersion blender.)
Strain the mixture through a strainer.
Then pour the liquid back to the saucepan on low heat.
Thicken the Sauce In a small bowl, mix together cornstarch with 1 tablespoon of water.
Pour the cornstarch slurry into the simmering strawberry sauce. Stir constantly.
Increase the heat to high, keep whisking for about 5 minutes or until it thickens into a glaze.
Remove from heat, and pour it into a bowl or container to cool down.
Once it comes down to room temperature, store it in the refrigerator. Serve it as a topping for cheesecake, donuts, and pie, etc.
Add sugar gradually until you reach desired sweetness.
Note that the sauce will become thicker once cooled.
If you prefer to have a brighter color, you can add red food coloring to your sauce.
