Bosnian Tarhana Soup Recipe

Popular in many regions outside of Bosnia, including Greece, Turkey, Albania, Egypt, and more, this traditional soup is so comforting. Made with sourdough noodles and tomato sauce, this soup has a distinct and delicious flavor to it.

Ingredients

  • 4 tablespoons tarhana
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 tablespoon tomato paste
  • 1 liter water room temperature
  • salt to taste

Instructions

  • Warm butter and olive oil in a pot over medium heat.
  • Add tarhana and sauté for one minute.
  • Pour in 1/2 cup of water and combine until tarhana begins to dissolve (about 2 to 3 minutes.)
  • If you would like to include tomato sauce, add it at this time and sauté for 2 minutes.
  • Pour in the rest of the water and bring to a boil, stirring continuously.
  • Reduce heat and allow the mixture to simmer for 5 more minutes.
  • Taste and add salt as desired.
  • Serve immediately.
