Recipe Ingredients
- purple cauliflower
- olive oil
- unsalted butter
- garlic powder
- ground paprika
- salt and pepper
Recipe Tips
- Always rinse the purple cauliflower well and pat it dry with paper towels before roasting. This will help to prevent the cauliflower from becoming mushy as it cooks.
- Add the seasoned purple cauliflower to the baking sheet in one single layer.
- Make sure to wash and dry your purple cauliflower well before cooking. Otherwise, it can get soggy.
- Cut the purple cauliflower heads into similar sized florets for even cooking.
- Don’t crowd the baking tray, as good air circulation is needed to get crisp-tender results.
- Use a quality, high-smoke point oil such as corn oil, canola oil, or avocado oil. Do not use extra virgin olive oil, which will degrade at the temperature of the oven.
- Cook the vegetable until it’s crisp-tender. Overcooked purple cauliflower is mushy and can become bitter.
- Cool the cooked purple cauliflower to room temperature and then refrigerate in an airtight container for up to 3 days.
How Long Does it Take? Baking times will vary based on the texture you prefer. For smaller pieces, bake for about 15-20 minutes. Larger steaks will take 20-25 minutes or until the cauliflower is golden and caramelized.
Recipe Variations
There are many delicious variations on roasted purple cauliflower. Here are some of my faves:
- Au Gratin: Halfway through roasting, sprinkle grated parmesan and breadcrumbs on top of the purple cauliflower.
- Spicy: If you want it to have a kick, add 1 teaspoon paprika and 1/2 teaspoon cayenne pepper to the spices.
- Barbecue: Brush the cauliflower lightly with your favorite barbecue sauce 5 minutes before it’s done and return to the oven.
Cauliflower is a versatile cruciferous vegetable that takes well to make seasonings, so don’t hesitate to experiment. Enjoy!
