1tablespoonpaprikaor smoked paprika
1teaspoononion powder
1teaspoongarlic powder
1teaspoonsalt
1teaspoonfreshly ground black pepper
1/2cupbarbecue sauceoptional, but highly recommended
Instructions
Combine the ingredients for the dry rub in a small bowl. Coat riblets generously with the rub.
Place the riblets in a crock pot and top with 1-1/2 cups barbecue sauce. Set the remaining 1/2 cup aside for the end.
Cook the riblets on a low setting for 8 to 10 hours. The more racks you have, the longer they will need to cook.
Remove the meat from the crock pot and lay it down flat on a baking sheet lined with aluminum foil. Cover with the remaining barbecue sauce.
Place the tray in the oven and broil for 3 to 5 minutes, until the sauce begins to caramelize and bubble. You may also wrap the meat in aluminum foil and place it on the grill instead.
Notes
Ask a local butcher to preserve riblets for you. They will offer you either rib tips or scraps from the underside of the meat. Both will work.
