Ingredients

Gyro Meat

  • 3/4 pound cooked Gyro meat from the deli
  • 1 tablespoon olive oil

Tzatziki Sauce

  • 1/2 medium cucumber grated using the large holes of your box grater
  • 3/4 cup plain Greek yogurt
  • 1/2 tablespoons olive oil
  • 1 tablespoon chopped fresh mint
  • 1/2 tablespoon lemon juice freshly squeezed
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon fine sea salt

For the Sandwich

  • 4 flatbread pitas
  • 4 tablespoons feta cheese
  • 1/2 cup sliced tomatoes
  • 2/3 cup lettuce chopped
  • 1/2 red onion sliced

Instructions

Make Tzatziki Sauce

  • Squeeze the grated cucumber to remove excess liquid.
  • Add the squeezed cucumber to a large bowl.
  • Add the yogurt, olive oil, chopped mint, lemon juice, garlic, and salt to the bowl. Stir to combine.
  • Let the mixture sit for 5 minutes to allow the flavors to develop. Taste and add more salt if needed.

Prepare Gyro Meat

  • Cut the gyro loaf into thin slices (about 1/4 inch)
  • Add oil to a cast-iron skillet over medium heat. Once hot, add gyro slices to the skillet and fry for about 2 minutes each side or until they are browned to your liking. Use tongs to flip them. Transfer to a plate and let them cool slightly.

Heat the Bread & Assemble the Sandwich

  • Heat the pita bread in another pan.
  • Add the gyro meat on the pita. Top with red onion, lettuce, tomatoes, feta cheese, and tzatziki sauce. Serve and enjoy!
