Gyro Meat
3/4poundcooked Gyro meat from the deli
1tablespoonolive oil
Tzatziki Sauce
1/2medium cucumbergrated using the large holes of your box grater
3/4cupplain Greek yogurt
1/2tablespoonsolive oil
1tablespoonchopped fresh mint
1/2tablespoonlemon juicefreshly squeezed
1/2teaspoonminced garlic
1/4teaspoonfine sea salt
For the Sandwich
4flatbread pitas
4tablespoonsfeta cheese
1/2cupsliced tomatoes
2/3cuplettucechopped
1/2red onionsliced
Instructions
Make Tzatziki Sauce
Squeeze the grated cucumber to remove excess liquid.
Add the squeezed cucumber to a large bowl.
Add the yogurt, olive oil, chopped mint, lemon juice, garlic, and salt to the bowl. Stir to combine.
Let the mixture sit for 5 minutes to allow the flavors to develop. Taste and add more salt if needed.
Prepare Gyro Meat
Cut the gyro loaf into thin slices (about 1/4 inch)
Add oil to a cast-iron skillet over medium heat. Once hot, add gyro slices to the skillet and fry for about 2 minutes each side or until they are browned to your liking. Use tongs to flip them. Transfer to a plate and let them cool slightly.
Heat the Bread & Assemble the Sandwich
Heat the pita bread in another pan.
Add the gyro meat on the pita. Top with red onion, lettuce, tomatoes, feta cheese, and tzatziki sauce. Serve and enjoy!
