Ingredients

  • 1 pound small potatoes scrubbed clean
  • 1 teaspoon butter or olive oil
  • pinch coarse salt
  • black pepper freshly ground

Instructions

  • Preheat the oven to 400°F. Set aside a baking sheet.
  • Prep the potato. Using a small skewer or paring knife, poke the potato 3-4 times about an inch deep. Place the potato on the baking sheet.
  • Bake for 15 minutes. Then remove the baking sheet from the oven.
  • Brush the potato on all sides with the butter or oil and sprinkle with the salt and pepper. Flip the potato for even cooking and place back onto the baking sheet.
  • Bake for an additional 10-15 minutes. Squeeze with an oven mitt and they will give under pressure when done. You can also insert an instant-read thermometer into the center and look for an internal temperature of 210°F. If it’s not ready, continue cooking for 5 minutes at a time until done.
