Easy Vegan Scrambled Eggs

Ingredients

  • 6 oz extra-firm tofu
  • 1 tablespoon olive oil
  • 1/3 cup white onion diced
  • 2 cloves garlic minced
  • 1/4 cup nutritional yeast
  • juice from ½ lemon
  • salt and pepper to taste

Instructions

  • Heat oil in a small skillet over medium-high heat.
  • Add diced onion and garlic and sauté until fragrant, about 2 minutes.
  • Scramble the tofu in a small bowl with a fork or hands.
  • Stir in the nutritional yeast, lemon juice, and seasonings.
  • Add the mixture to onions and cook for a few more minutes, until tofu is heated all the way through. Serve and enjoy!
