When the cells of onion are broken, from cutting into it, an enzyme called alliinase is released and converts the amino acid alliin into a volatile substance called allicin. As soon as allicin is produced, it moves through the air, reaching and irritating our eyes, and literally brings us to tears.
How to Cut Onions Without Crying
Method 1: Freeze the onion before cutting
Here’s an easy solution for those pesky tear-inducing onions! Place the onion in the freezer for 15 to 20 minutes before slicing. You can also store onions in the refrigerator instead of your cupboard or pantry. Cold onions release less gas and as such, should be less of an irritant to your eyes.
Method 2: Light a large candle near the cutting board
If you have an abundance of candles in your home, grab one to keep in the kitchen and light it when you’re slicing onions. The flame from the candle helps to burn off the sulfur compounds released by the onion. When you’re done, remember to extinguish the candle. Another option is to slice your onions close to – but always at a safe distance from – the flame of a gas stove. Be very careful working near the flame. Once you’re done, remember to turn off the stove.
