Ingredients You’ll Need
- Chinese cabbage and other vegetables
- vegetable oil
- garlic
- red chilies
- cooking wine
- soy sauce
- sugar
- water
- vinegar
- scallions
- salt

How to Cook Chinese Vegetables
- Add oil to a wok over high heat. Once hot, add the garlic and chili, reduce the heat to medium, and stir-fry for a minute until fragrant.
- Add Chinese vegetables, wine, soy sauce, sugar, and water.
- Increase the heat to high, cover the wok and let the cabbage cook for 1-2 minutes.
- Uncover the wok and stir in the vinegar, scallions, and salt to taste. Cook until cabbage is nice and crunchy. Serve hot and enjoy!

Tips and Tricks
- Use high heat and a wok if you have one. A large skillet will work as well.
- Reduce the amount of dried chilies or leave them out altogether to suit your taste.
- Cover the wok with a lid and cook for about 2 minutes and then uncover for a nice crunchy texture.

Ingredients
- 1 ½ lbs Chinese cabbage or other vegetables
- 2 tablespoons vegetable oil
- 2 tablespoons minced garlic
- 4 dried red chilies deseeded and chopped
- 2 teaspoons cooking wine
- 1 tablespoon soy sauce or more if needed
- 1/2 teaspoon sugar
- 1-2 tablespoons water
- 1/2 teaspoon vinegar
- 2 scallions chopped
- salt to taste
Instructions
- In a wok over high heat, add the oil. Once hot, add the garlic and chili, reduce the heat to medium, and stir-fry for a minute. Do not let the garlic burn.
- Add the vegetables, wine, soy sauce, sugar, and water.
- Increase the heat to high, cover the wok and let the cabbage cook for 1-2 minutes.
- Uncover the wok and stir in the vinegar, scallions, and salt to taste. The cabbage should be wilted, but still slightly crunchy and caramelized. Serve hot and enjoy!
