Place pork chops in a ziploc bag and flatten them with a food mallet or hand to about 1/2 inch or less.
In a bowl, combine the flour or harina, salt and pepper
Carefully dip to coat the pork chops into the flour, then into the scrambled egg, and then into either the breadcrumbs or the flour mixture.
Heat a skillet over high heat and add ¼ inch of oil. Allow the oil to reach a temperature of 325 degrees F.
Fry the pork for 4 to 5 minutes per side or until golden brown on the outside and cooked thoroughly on the inside. Place on a plate and cover with foil.
Slice your cemita roll in half and scoop out some of the bread from the top half. This will allow more room for fillings.
